You will also need:

  • Pastry brush
  • Piping bag
  • Bowls
  • Saucepan
  • Stove

  • Baking parchment

It’s time to put together our easy, delicious, zesty lemony puffs. Just follow these steps:

  • First, preheat your oven to 200℃
  • On a clean flat surface, place one of the pastry sheets on top of the other. Cut them into squares (you may use a ruler or straight edge to ensure equal sizes)
  • Place the top layer of pastry squares onto a baking sheet, place the bottom layer onto another
  • Sprinkle one tray with confectioners sugar and cover with baking parchment (this will be your bottom)
  • Brush the egg wash on the other tray and sprinkle with white sugar (this will be your top)
  • Pop them in the oven and bake for 15-20 mins or until golden brown
  • Let them cool

To make the filling:
In a small saucepan, add sugar, cornstarch, and soymilk over low heat. Stir until mixture is smooth and lumps disappear. Once the mixture is lump-free, turn up the heat to a medium-high and bring to boil, stirring constantly. Boil until mixture thickens.

Remove from heat and allow it to cool to room temperature. You then whisk in the lemon juice, lemon zest, butter (or margarine). Set aside.

Tip: Using your lemon zester or cheese grater, move it lightly in a circular motion against the lemon to get as much zest. To get more juice from your lemons, roll them against a flat surface first for a few minutes.

There you have it! A delicious, nutritious snack that’s loaded with lemony goodness! Our zesty lemony puffs are also great for breakfast. You can also keep them in the freezer for a day or two and heat them up anytime you want.

While its best served cool, we also like to heat it up a bit and grate over some cheese for an extra umami taste. And if you have extra filling left, you can use it as a glaze – just spread or spoon it over the warm puffs and grate more zest. You can add sprinkles or even chocolate chips if you are feeling sinful!

Pair them with your drink of choice – from freshly brewed coffee, a soothing cup of tea, of a glass of your favorite wine.
