Heat a pan and boil some water in it. When the water starts boiling, add to it one big bunch of Palak (spinach ) and blanch for two minutes and immediately put the palak in ice-cold water to stop it from cooking further. Now puree the palak with some fresh coriander leaves and chilies. Take another and add a dash of mustard oil to it. Add cumin seeds when the oil is hot, stir and then add sliced onion cook until translucent.
Further, add chopped garlic, ginger juliennes, and diced potatoes. Cook for 4-5 minutes. Now add red chili powder, garam masala, amchur powder, besan, turmeric powder, coriander powder, and cumin powder. Stir and cook it covered for 4-5 minutes. Add salt and two tablespoons of curd and stir well. Now add the palak puree and add garam masala and some fresh cream and fresh lime juice. Mix well and cook it for about a minute and then turn off the flame. Enjoy with rice or roti.
Tadka Dal: One The Healthy And Tasty Indian Recipes
This is one of those recipes which is cooked in almost every house of India. For this recipe, pressure cooks the dal with salt and turmeric for 4-5 whistle and keep it aside. Now for the tadka, heat a pan add ghee, add cumin seeds let it crackle. After that, add chopped garlic and chili, sauté for a while. Now add finely chopped onions and cook until it is soft. Further, add sliced tomatoes and cook until the tomatoes are soft. Add cumin, coriander and red chili powder to the tomatoes. Cook for 5-6 minutes stirring in between. Add salt and a pinch of garam masala, cook for a minute and add the dal to the pan. Let the dal simmer for a while add amchur powder and freshly chopped coriander leaves. Serve hot.
Green Aalu Gobi:
This recipe has got all authentic flavor in it. For this first take, a mixing jar add sliced onions, green chilies, garlic, and coriander leaves, puree it until it makes a smooth paste. Now heat a pan and add oil. Fry diced potatoes until golden brown and soft and take them off. Then in the remaining oil fry the cauliflower until brown and take them off and keep it aside.
In another pan heat oil. Add cumin seeds and then add ginger juliennes and stir for a while. Now add the paste which you made early and cook for 4-5 minutes. After that, add cumin powder, amchur powder and coriander powder and cook for another minute. Now add the fried vegetables to it and add salt. Cook for 6-10 minutes stirring occasionally. Now add black pepper powder, garam masala, fresh lime juice, and chopped coriander leaves. Give it a good toss and serve with hot parathas.
