For this, you would need 2 tbsp. of olive oil, 1 medium chopped onion, 2 stalks diced celery, grated ginger, 2 cups black lentils, 1 can chopped tomatoes, 1 tsp. smoked paprika, 3 cloves minced garlic, 2 medium diced carrots, 1 tbsp. mixed herbs, 6 cups of vegetable stock, 2 bay leaves, and salt and pepper to taste.

Firstly, heat olive oil in a large pot over medium heat and then add onion carrots, and celery until they are soft. Next, add the garlic, ginger, herbs, and turmeric and cook them for a couple of minutes. After you have stirred it well enough, add the lentils, vegetable stock, tomatoes, and bay leaves and bring it to boil. You need to cook them until the lentils are tender which may take up to 20 minutes. After this process, stir in the paprika and add salt and pepper to taste as the final process.

Chop your veggies and mix 1 tbsp. of oil with onion until they have turned golden brown. Next, add garlic, pepper, and corn and cook them until they are soft. Then you may add lentils, veggie broth, chili beans, and spices. Set them at high pressure of 15 minutes and lastly, add crushed tomatoes and adjust the seasoning to taste, and add salt and pepper to taste.
