Ingredients For Simple Vegetable Lasagna

Veggies And Spinach

  • Two tbsp. of olive oil
  • Three carrots
  • One red pepper
  • One zucchini
  • One yellow onion
  • ¼ tsp. of salt
  • Two cups of spinach

Tomato Sauce

  • One can of diced tomatoes
  • Two tbsp. of olive oil
  • Two cloves of garlic
  • ¼ cup of basil for garnishing
  • Half tsp. of salt
  • ¼ tsp. of red pepper

Other Ingredients For Simple Vegetable Lasagna

  • Two cups of low-fat cottage cheese
  • One tsp. of black pepper
  • Nine lasagna noodles (Not boiled)
  • One tsp. of salt
  • Two cups of mozzarella cheese

Instructions

Step- 1: Preheat the oven to 420 degrees and later, check all the ingredients that are handy to you. Chop all the veggies.

Step- 2: First Prepare The Veggies: At first, take a large pan; pour olive oil and heat for a few minutes.

Step- 3: Later, add chopped carrots, bell pepper, yellow onion, salt, and zucchini. Cook it until all the veggies turned to golden.

Step- 4: Then again, add spinach in that pan and cook it for five minutes. Set it aside.

For Tomato Sauce

Step- 5: Initially, drain the excess tomato sauce. At first, take a bowl; add salt, garlic, red pepper, and olive oil. Later, mix it with the help of a food processor or stand mixer.

Step- 6: Now, add basil and tomato sauce. Mix it for another five minutes.

Step- 7: Then again, add cottage cheese into the food processor and blend it until it gets a smooth texture. However, it will take five minutes with the stand mixer.

Step- 8: Finally, transfer all the veggies and the spinach mixture into the food processor bowl and mix it until it combines. Then again, salt for taste. Besides, you can even add red pepper to get simple vegetable lasagna.

Step- 9: Later, take a baking dish; spread tomato sauce, and top up with lasagna noodles. Then again, spread cottage cheese mixture evenly over the lasagna as layers.

Step- 10: Then again, top up with tomato sauce and spread mozzarella cheese lastly on the top of most of the simple vegetable lasagna.

Step- 11: Cover the baking pan with a paper so that it won’t stick and mess oven. Moreover, ensure that the foil or paper is not touching the cheese. Bake it for at least 15 minutes.

Step- 12: Remove the parchment paper or foil and cook it again for another ten minutes. Make sure it is turning into brownish.

Step- 13: Then again, remove the pan from the oven and cook the dish for half an hour for better taste. Now, sprinkle basil over the top of simple vegetable lasagna.

Besides, you can have this simple vegetable lasagna with garlic bread, potato chips, wedge salad, etc. Most people generally like to eat this recipe with lemony steamed green beans, steamed asparagus, roasted broccoli, Caesar salad, and baby greens.
