Black beans are very versatile and nutrient- packed ingredient with lots of fibre and plant based protein. It is an inexpensive and budget friendly ingredient. Here are the vegan Black Bean recipes which you can easily made with ingredients available at your home.

Easy Black Bean Salad

Ingredients – 4 ½ cups cooked, rinsed and well drained Black beans or 3 cans of canned Black beans, 1 chopped red or green bell pepper, 2 ears of corn, 1 cup chopped red onion, 1 cup cherry tomatoes, ½ cup chopped cilantro, 1 medium jalapeno, chopped, 2 tablespoons lime juice, ½ teaspoon lime zest, ¼ cup white wine vinegar, ¼ cup extra virgin olive oil, ½ teaspoon ground cumin, ½ teaspoon chilli powder, salt to taste and optional garnishes of your choice.

Directions – Combine all the ingredients in a large serving bowl and adjust the taste accordingly. Next, cover and refrigerate for at least 2 hours or overnight.

Black Bean Pico de Gallo

Ingredients – 2 cups cooked and dried black beans, 1 ½ cup chopped ripe cherry tomatoes, ½ medium red onion, chopped, 1 – 2 jalapeno peppers, ½ cup chopped cilantro and salt to taste.

Directions – Add the diced tomatoes, chopped onions and chopped cilantro in a small – medium sized bowl. Slit the jalapeno peppers and add them in the bowl until it reaches your desired flavour. Now, add the black beans to the other ingredients, squeeze some lime juice over other ingredients for a zingy taste. For best results, refrigerate the freshly made Pico de Gallo and serve with tortilla chips. Leftovers can be refrigerated and stored in an airtight containers.

Black Bean Tacos

Ingredients – 1 can rinsed and dried black beans, 1 tablespoon olive oil, 1 teaspoon cumin, ½ teaspoon chilli powder, ½ teaspoon oregano, ¼ cup your favourite tomato – based salsa, 2 minced garlic cloves, lemon juice, 2 peeled and pit removed avocados, salt to taste, diced tomatoes, 12 mini tortillas, pickled red onions and chopped cilantro.

Directions – Preheat oven to 375°. Place the parchment paper on a baking sheet and set aside. Heat the oil in a small skillet over medium heat and sauté minced garlic until fragrant. Now add cumin, chilli and oregano an sauté for 1 minute. Add the black beans and salsa and stir well. After smashing the mixture, cook for 5 – 6 minutes and squeeze some lemon over the mixture. Now, spread 1 tablespoon of smashed avocados mixed with some lemon and salt on a tortilla. Add black beans and top with pickled red onions, diced tomatoes and chopped cilantro. Place the folded tortillas onto the baking sheet and bake for 10 to 12 minutes, until crispy.

Mexican black Bean stuffed potatoes

Ingredients – 3 large potatoes, 1 ¼ cup well drained black beans, 2 chopped spring onions, 2 tablespoons salsa, 2 tablespoons chopped coriander, ½ teaspoon chilli powder, ½ teaspoon smoked paprika, ¾ cup grated cheddar cheese, black pepper and salt.

Directions – Preheat the oven to 200°C. Then, prick the potatoes and microwave for 10 – 15 minutes. Make sure to turn them every minute to ensure they cook evenly. Meanwhile, add salsa, fresh coriander, spring onions, chilli powder, paprika, salt and pepper. Create a hollow in the softened potatoes with the help of a spoon. Stuff each potato with the bean mixture and top it with grated cheese. Bake the potatoes for around 15 minutes and serve hot.
