Black Bean Brownies with Walnut Frosting

Ingredients:

– One 15 oz can of black beans, drained and rinsed

– ¼ cup cocoa powder

– ½ cup sugar

– ⅓ cup oil (I used melted vegan butter)

– ½ tsp vanilla extract

– ¼ cup flour

– Pinch of salt

Frosting:

– ⅓ cup vegan butter, at room temperature

– ¾ cup powdered sugar

– ½ tsp vanilla extract

– A few drops of water, as needed

Method:

Preheat your oven to 350 degrees F. Line an eight-inch baking pan with parchment paper. In a food processor, combine the black beans, cocoa powder, sugar, oil, and vanilla extract. Blend until completely smooth. Add the flour and salt and blend again until everything is combined. Pour the mixture into the prepared pan and spread evenly. Bake for 25 minutes or until a toothpick comes out clean when inserted into the center.

Let the brownies cool completely before frosting. To make the frosting, combine the vegan butter, powdered sugar, vanilla extract, and water in a bowl and beat until smooth. Frost the brownies and enjoy!
