Vegan Dinner Recipes in One Pot

To kick off the new year, we rounded up the best of our Vegan Superfoods for this article. This collection includes everything from mouthwatering vegan main courses to simple vegan staples that can serve as good starting points for creating delicious, memorable vegetarian meals. With these recipes in hand, you can whip up impressive dishes without having to know a single line of code! Here, I’ve listed the most popular vegan recipes in alphabetical order (using the term “vegan” to refer to vegetarian food) – beginning with the most important nutrient: antioxidants.

Everyone knows that protein is important to building muscle, but did you know that there are actually several nutrients that are particularly important for building muscle? Greens and lentils are filled with them. Some of my vegan dinner recipes even call for black beans (or chickpeas). A good side dish idea is spiced tomato and lentil soup.

Did you know that you can make your own pizza dough? That’s right – plant-based flour. If you’re looking for a flavorful textured vegetable that also has a soft, crumbly texture, then you need semolina. Chickpea flour offers a similar crunch. Flour is an important ingredient for several of my vegan dinner recipes, including: whole grain flat bread, macaroni and cheese, vegetable lasagna and shepherd’s pie.

Vegan Chili Recipes

As you might guess, vegan chili recipes are some of the most popular on this list. Of course, there are also many interesting chili flavors, such as Tex-Mex. One of the most popular South American chili flavors is black beans. You can add variety and spice to your vegan chili recipe by using different varieties of beans, such as kidney, black or pinto beans, garbanzo bean, and red or green beans. Other popular ingredients include onions, bell peppers (red and green), carrots, corn, garlic and cilantro.

Some of my vegan dinner recipes also call for a variety of spices. These spices can be a combination of herbs and spices, or they can be used individually. For example, coriander, cumin, garlic powder, black pepper, nutmeg, dried oregano, Cayenne pepper, and turmeric all can be used together to make a hot and spicy blend. Other spices you can use are dried chilies (red and green), smoked paprika, soy sauce, lemon juice, celery, onion, tomato paste, avocado, salsa, hot mustard, basil and more.

I encourage you to look through a cookbook or online resource and find a delicious and new vegan recipe that meets your taste buds’ needs. From comfort food, side dishes, desserts, and just about anything else on this earth, you will have an endless source to choose from when it comes to vegan recipes for the entire family.
